Banana & Blueberry Muffins



GBBO has got me in the mood to bake. I recently whipped up some Banana and Blueberry Muffins and they went down a treat, so I thought why not share my recipe with you?



RECIPE MAKES 12 

You will need:
230 grams (1 3/4 cups) self raising flour
150 grams (3/4 cup) granulated white sugar
1/2 tsp salt
2 large free range eggs
113 grams (1/2 cup) melted unsalted butter
3 large very ripe bananas, mashed
1/2 Pack of Blueberries (75 grams)
1 teaspoon vanilla extract
Handful of Oats

Method:
  1. First line your muffin tray with paper cases and make sure to pre-heat your oven to around 180C or 350F.
  2. In one bowl combine your flour, sugar & salt. In another combine your eggs, butter, mashed bananas & vanilla. Then fold one mixture into the other before thoroughly mixing it through. 
  3. Next add the blueberries. Add as little or as much as you want. I tend to add about half a pack and stir these into the mixture. 
  4. Then divide your mixture between your cases ready to bake. I also sprinkled the top of all my muffins with a handful of oats to give it a little extra crunch to the bake
  5. Place the baking tray into the middle of the oven and bake for 20-25 minutes or until golden brown.
Now for the best part - leave to cool for ten minutes and enjoy whilst still warm!

These went down a treat with my flatmates and I am eager to bake more, any baking/recipe suggestions please leave below as I am always looking for inspiration. I think cinnamon cupcakes are next on my agenda.

Lets Have A Catch Up...


I haven’t posted on my blog in a few weeks and that has mostly been down to the fact I have moved flats and been without internet for 3 weeks now. The struggle is real. It is crazy how not having internet can make you feel so disconnected from everything in the world. I still have my phone, but I have also ran out of data.

Even although I am longing for the day Sky finally sort our connection out and I can get back to browsing the web and binge watching Netflix, it has actually been lovely to just have a break from being engrossed online all the time. It has been nice to spend endless hours just chatting about random shit with my flatmates instead of being locked away in our rooms on our laptops in the evenings or even just sitting in my room reading magazines before bed has been so relaxing. It has also made me realise how much time I spend online and I don’t feel as addicted to social media and my phone as much as I used to be. It ahas also made me think about what we all did before wifi? Before using twitter/instagram/snapchat every day of our lives. It is actually kind of depressing how much we all spend online these days. When we eventually get it back I am making a pledge to myself to not become that way again and to use it in moderation.

ANYWAYS - major internet moan tangent. The main point of the story is that I moved flats. YAY. I am so super happy with my new flat. Flat hunting in London is not easy but we managed to get lucky and find a gorgeous flat that we all love. We never had a living room in our last flat, just a kitchen space, and it wasn’t that nice and definitely not a space we could use to socialise in or invite friends over to. Now, we have a huge living room space, with sofa’s, a dining table, and a breakfast bar linking to the kitchen space. We now feel like we have a space we enjoy spending time in, and the ability to actually have people over. So. Much. Room. Also - we have an American style fridge/freezer. I feel like I am living the dream over here haha.

I also got a new camera recently which I am very excited about. I got the white Olympus Pen camera and i love it. I am still getting the hang of all the different settings and trying to learn to take manual photos instead of auto all the time, but i thoroughly enjoying it. It is so fun going out with a camera round your neck and snapping away, and feel like I am starting to get more into photography. So hopefully my photo quality on here will also improve from now on. I have lots and lots of post’s planned, as all that time away from the internet was refreshing and has left me with lots of ideas!! When I finally get internet that is, as the wifi speed in Cafe Nero is not quite making the cut.

So that’s basically the 411, moving was busy and stressful and tiring but we got there in the end and I am feeling settled and happy in my new flat!
